Our farm

A small farm in the Willamette Valley, growing seed garlic the slow way — by feeding the soil first and letting good bulbs follow.

Baldwin Farm is a small, family-run operation focused on one thing done well: hardneck seed garlic worth putting in the ground.

We're not a big supplier, and we don't want to be. Everything in the farm store is grown right here — planted, harvested, cured, and graded by us. We never buy garlic from outside growers to resell, so when you plant one of our bulbs you know exactly how it was raised and how fresh it was when it left the farm.

We feed the soil, not the crop

Garlic is only as good as the ground it grows in. Instead of reaching for pesticides and heavy tillage, we build the soil up year after year — compost, cover crops, mulch, and a long rotation that keeps the land alive between plantings.

That living soil is what you taste, and it's what shows up as vigor in the field the following spring. Healthy ground grows healthy garlic; there isn't a shortcut we've found that beats it.

A year in the ground

Seed garlic isn't a quick crop. It goes in as the season turns cold, sleeps through winter under mulch, and spends the following spring and summer sizing up before we pull it. That patience is the whole point — it's what makes a bulb worth replanting.

Why hardneck

We grow hardneck varieties because they earn their keep — deeper, more complex flavor, big cloves that are easy to peel, and the reliable cold-hardiness that Oregon winters ask for.

They're built for planting, not just eating. A single clove becomes a full head, so a small order of seed garlic can plant a whole bed and set you up to save your own seed the year after.

Our promise

Grown on our farm, never sourced from anyone else. Raised without pesticides in soil we tend on purpose. Graded by hand so what arrives is ready to plant. If a bulb wouldn't go in our own beds, it doesn't go in yours.
